Repeat for all the pieces (5 and 6). Shake bag gently to coat chicken, remove from bag and let set for 10 minutes. Dredge chicken pieces in flour mixture.

Check the temperature by a food thermometer. Place 1 layer of chicken into the fryer basket and carefully lower basket into the preheated oil. Sprinkle the chicken breasts with salt and freshly ground black pepper, to taste.
